West Jordan is one of the largest cities in Utah by population, and the practical reason most people look here is straightforward: the money goes further than it does on the east bench while you stay inside Salt Lake County. The gap against Sandy and Draper is large and it is real.
Against the middle of the valley it is a different story, and worth knowing before you commit to a direction. On recent medians West Jordan and Murray sit at almost the same number, so moving west is not automatically the budget answer.
The value argument deserves to be said plainly rather than dressed up. For a lot of buyers, the choice is between a smaller or older house further east and more house here, and there is no universally right answer. It depends on what your week actually looks like.

Drive your commute. West Jordan is on the west side of the valley, and depending on where you work that is either a non-issue or the main thing. Drive it at the hour you would actually drive it, not on a Sunday.
Inspect properly, especially on the older stock. In a market this varied, the inspection is doing more work than usual. It is the difference between a good buy and an expensive one, and it is not the place to save a few hundred dollars.
Look at the specific street rather than the city. That is true everywhere and it is more true here than most.

My buying take on West Jordan
One honest correction to the usual assumption. West Jordan's median sits at roughly the same figure as Murray's, which is in the middle of the valley. So moving west is not automatically the budget answer, and a citywide median never establishes which individual house is the better value. Look at both before you commit to a direction.
Where West Jordan does separate is against Sandy and Draper, which sit substantially higher. If those are the alternatives you are weighing, the gap here is real and it is large.
Position inside the city matters more here than almost anywhere. Compare houses in eastern West Jordan against ones further west using your real destination and your real departure time. A house that looks close on a valley map can involve a significant drive before you even reach your main commuting route.
